Healthy Tailgaiting Tips & Recipes

Tailgating for any sporting event can be a recipe for a caloric disaster. Between fried chicken wings and bags of chips, how are you supposed to make healthy choices and still have a good time? Here are a few tailgating tips and healthy recipes that all football fans can enjoy!!

Tailgating for any sporting event can be a recipe for a caloric disaster. Between fried chicken wings and bags of chips, how are you supposed to make healthy choices and still have a good time? Here are a few tailgating tips and healthy recipes that all football fans can enjoy!!

Creamy Mexican Dip (8 servings; 1/4 cup per serving)

1 cup plain fat free yogurt (try the Greek yogurt!)

1/2 cup fat free salsa

1/2 avocado, diced

1/3 cup cilantro, fresh & chopped

1/2 small uncooked red onion, chopped

1/2 ground cumin

1/2 tsp table salt

Extra Ingredients for Garnish:

1/4 cup diced

1 Tbsp cilantro, fresh and chopped

1 Tbsp uncooked red onion, chopped

In a medium bowl, stir together yogurt and salsa until blended. Stir in remaining ingredients (except garnishes). Cover and refrigerate up to one day. When ready, transfer to a bowl and sprinkle with garnishes. Serve with raw veggies or some whole grain pita chips.

 

Grilled Chicken Kebabs (4 servings)

Marinade:

3 lemons, juiced

3 Tbsp olive oil

3 cloves garlic, minced

1/4 cup dry dill (optional)

Salt (to taste)

Kebabs:

2 pounds boneless, skinless chicken breast, chunked

1 yellow onion (or red works too), quartered and chunked

1 red pepper, chunked

1 small zucchini, sliced into 1-inch rounds

*You can substitute any ingredients above for other veggies you prefer

Prepare marinade in bowl by combining lemon juice, olive oil, garlic, herbs, salt and pepper. Prepare kebabs by skewering alternating pieces of chicken with various veggies. Be sure to leave enough room on ends of skewers to flip them while cooking. Place skewers in baking dish and cover with marinade. Cover dish and refrigerate overnight or at least for a few hours. When ready to cook, place skewers on the grill. Cook while using tongs to turn skewers occasionally until chicken is cooked through (about 15-20 minutes). Enjoy!

 

Pumpkin Pie Dip (12 servings; 1/2 cup per serving)

15 oz can pumpkin

3/4 cup puréed (or mashed) banana

1 tsp vanilla

1/8 tsp cinnamon

1/8 tsp pumpkin pie spice (or more to taste)

6 oz 0% Greek yogurt (Fage)

8 oz Truwhip (or another fat-free whipped topping)

Cut up apples, for dipping

Mix pumpkin with bananas, vanilla and spices; blend well.

Mix in yogurt. Fold in whipped topping and chill in refrigerator until ready to eat.
