Recipes Using Greek Yogurt

More delicious recipes using greek yogurt, which lowers the fat and adds protien!

Greek Yogurt Ranch Dip with Fresh Veggies

Ingredients:

  • 1 cup plain Greek yogurt, strained
  • 1 envelope ranch dressing mix
  • Choice of fresh vegetables such as: carrots, broccoli, or peppers.

Directions:

  1. Whisk ingredients together until thoroughly incorporated.
  2. Store in an air tight container in the refrigerator.

 

Blackened Chicken Breast over Cilantro Lime Quinoa with Avocado Yogurt Puree

Ingredients:

  • 2 boneless, skinless chicken breasts
  • ½ teaspoon paprika
  • ¼ teaspoon pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon cumin
  • 1 teaspoon olive oil
  • 2 cups low sodium chicken stock
  • 1 cup quinoa
  • 2 limes, juice & zest
  • Salt & pepper to taste
  • 2 tablespoons cilantro, chopped
  • 2 avocados
  • 1 teaspoon lemon juice
  • 3 ounces plain Greek Yogurt

 

Directions:

  1. Combine all dry seasonings in a small bowl and sprinkle on both sides of the chicken breasts.
  2. Add olive oil to a large pan or skillet and heat over medium/high heat.
  3. Add chicken, cover with lid and cook for 7 minutes on each side.
  4. Add chicken stock and quinoa to a medium saucepan.  Bring to a simmer over medium/low heat.
  5. Reduce to low and simmer for 10-15 minutes with lid on, until all stock has been absorbed.
  6. Once chicken breasts finish cooking, allow to cool before slicing.
  7. Toss cooked quinoa in lime zest, juice, salt, pepper, and chopped cilantro.
  8. Combine avocado, Greek yogurt, teaspoon of lemon juice and a pinch of cilantro in a mini food processor or blender.  If too thick, add milk to desired consistency.

 

Slow Cooker Creamy Taco Soup

Ingredients:

  • ¾ cup plain Greek Yogurt
  • 1 15 ounce can white beans, rinsed and drained
  • 1 15 ounce can black beans, rinsed and drained
  • 1 14 ounce can diced green chilies
  • 1 15 ounce can diced tomatoes
  • 1 cup frozen or fresh corn
  • 1 ½ pounds shredded precooked chicken breast
  • 1 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • ½ teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 tablespoon fresh cilantro, chopped
  • 2 teaspoons Mrs. Dash Fiesta Lime Seasoning Blend

Directions:

  1. Place ½ cup broth and white beans in a blender and puree.
  2. Add yogurt and blend again.
  3. Pour liquid into slow cooker. Add remaining ingredients and stir.
  4. Cover and cook on high for 2 hours or on low for 4-5 hours.

 

Rich Chocolate Protein FroYo

Ingredients:

  • 6 ounces Greek Yogurt, any flavor
  • 2 tablespoons unsweetened baking coca
  • Stevia, agave nectar, or any sweetener to taste

Directions:

  1. Stir all ingredients until smooth.
  2. Freeze for 30-45 minutes.
