Looking for a new and healthy recipe? Look no further than your fellow employees! AMI employees will be sharing their favorite healthy recipes for you to try. This week's recipe was submitted by Janet Portor from Brick 455. 

 

LENTIL-VEGETABLE SOUP

Servings: 8

Calories 208, Total Fat 4 g, % Fat 16, Sat. Fat 0.3,Cholesterol 0 mg, Sodium 764 mg

Ingredients

1 large onion, chopped                 

1 clove garlic, minced                  

2Tbsp. vegetable oil

3 carrots, sliced

2 stalks celery, sliced

½ tsp. chili powder

5c. fat free beef broth

1 c. dry lentils

1(14 ½ 0z) can stewed tomatoes

4 to 5 red potatoes, cooked and cubed

Chopped fresh parsley

 

Directions

  1. Sautee onion and garlic in oil in a soup pot until softened. 
  2. Add carrots, celery, and chili powder and cook 1 to 2 minutes longer, stirring often. 
  3. Add broth and lentils. 
  4. Cover and simmer until le ntils are tender, about 35 minutes. 
  5. Add tomatoes and potatoes and cook until heated. 
  6. Sprinkle individual servings with parsley.
