LENTIL-VEGETABLE SOUP

Ingredients
1 large onion, chopped
1 clove garlic, minced
2Tbsp. vegetable oil
3 carrots, sliced
2 stalks celery, sliced
½ tsp. chili powder
5c. fat free beef broth
1 c. dry lentils
1(14 ½ 0z) can stewed tomatoes
4 to 5 red potatoes, cooked and cubed
Chopped fresh parsley
Directions
- Sautee onion and garlic in oil in a soup pot until softened.
- Add carrots, celery, and chili powder and cook 1 to 2 minutes longer, stirring often.
- Add broth and lentils.
- Cover and simmer until le ntils are tender, about 35 minutes.
- Add tomatoes and potatoes and cook until heated.
- Sprinkle individual servings with parsley.
